Uwu Apple Adagio is an Arabica coffee from Flores, Manggarai, Nusa Tenggara Timur, processed using an anaerobic black honey method. The name reflects the cup character discovered during cupping, where a gentle apple tea impression emerged, soft and comfortable to drink, best enjoyed slowly.
During roast profiling, a restrained approach was chosen to allow the coffee’s fermentation-driven character to remain clear. Consistent moisture content and even colour development contributed to a balanced, composed cup rather than an aggressive expression.
