Uwu Apple Adagio

Sakha Coffee

This is a preview listing representing the type of coffee we plan to offer for the Fermentation Explorer profile. It is not available for purchase yet.

Uwu Apple Adagio is an Arabica coffee from Flores, Manggarai, Nusa Tenggara Timur, processed using an anaerobic black honey method. The name reflects the cup character discovered during cupping, where a gentle apple tea impression emerged, soft and comfortable to drink, best enjoyed slowly.

During roast profiling, a restrained approach was chosen to allow the coffee’s fermentation-driven character to remain clear. Consistent moisture content and even colour development contributed to a balanced, composed cup rather than an aggressive expression.

Tasting notes
Red apple, plum, a hint of cinnamon, and black tea
